Top chefs have now become global brands with restaurant empires bearing their names, according to a feature in The Observer’s Food Monthly supplement. Alain Ducasse was the first top chef to do this and is still the only one with  three 3-star restaurants, in Paris, Monaco and New York.  However, some industry observers warn that some chefs are in danger of spreading themselves too thin, too often absent from restaurant kitchens that bear their name.
