Increasing numbers of migrant workers have driven down pay in the restaurant and hotel sector but the savings on wage bills have not been passed on to customers. Basic pay for the 1.8m hotel and restaurant workers fell about 2.5% last year, while overtime earnings dropped 20%. Average weekly earnings were down 2.4% at £211.50, according to figures from the Bank of England. But while wages dropped, over the same period average hotel and restaurant prices rose by 3.4%.
