Itsu, the Japanese sushi bar chain, will open its 35th site in London under its smaller store format next month, as it nears operating a 40-strong estate in the capital by the end of the year. The group, which is led by Gerard Loughran, plans two openings in October in Broadwick Street and Cowcross. It will follow this up with a further opening in Chancery Lane in November to take its estate to 37 sites in total, including two full-service sites in Chelsea and Notting Hill. The group is also looking to expand into two overseas territories over the next few years and is thought to have explored an opening in Paris Earlier this year, the company announced it had swung into profit in the 53 weeks to 5 January 2012 on the back of new site openings, its maturing estate and a more simplified and efficient operational base
