Vapiano, one of two “hot concepts” featured at the European Foodservice Summit in Zurich, has plans to open 30 sites by the end of 2007, from a current base of 20 units. Kent Hahne, co-owner of the German fast-casual concept, said that it planned to expand in Europe, the Middle East and the US. His company aims to operate between 70 and 80 restaurants by the end of 2008, with a plan to bring the concept to the UK. At the moment the pasta, pizza and salad concept has 20 restaurants and annual sales of euros 25m. It has 15 sites in Germany, and single locations in Austria, Belgium, Holland, Turkey and the US. Build costs range between euros 900,000 and euros 1.3m. Each outlet serves an average of between 800 and 1,100 customers each day. Brand characteristics include: freshly-made food; a casual atmosphere; striking décor and designe; and not one kitchen but a series of cooking stations. Customers are 65% female and its audience include young tourists, students and families and friends. The sales split at Vapiano is 65:35 in favour of food. Average spend per customer is euros 10 per visit.
