Gaucho Grill is set to open a new concept called CAU at its recently secured site in Guildford, M&C Report can reveal. The group, which operates 14 restaurants, has agreed to buy the lease of the Auberge outlet operated by Town Centre Restaurants. The upscale steakhouse operator made the acquisition via a subsidiary called CAU Restaurant – which operates its CAU concept in Amsterdam. Like Gaucho, CAU is a steakhouse restaurant – however its site in the Damstraat area of Amsterdam features a more contemporary interior, including a video ceiling that promotes the freshness of the Argentinian beef on offer and enables diners to see the chefs cooking in the kitchen. CAU is an acronym for Carne Argentina Unica. Gaucho is said to have paid a "substantial premium" for the 3,800sq ft property, which has an annual rent of £110,000, with 15 years remaining on the lease. It is located on the High Street, Guildford. Town Centre was advised by Shelley Sandzer while Gaucho was advised by Kelion Sworn. Gaucho, which recently launched a restaurant in Beirut, is backed by Intermediate Capital Group.
