Ed’s Easy Diner, the American-style casual dining chain, is to open its first restaurant in Wales in September, after securing a site in Cardiff’s St David’s Shopping Centre. Opening in early September, the site will become the seventh for the group, which is backed by investment group Rankvale Capital. The new restaurant will feature 70 internal covers across 1,650sq ft. Andrew Guy, operations director at Ed’s Easy Diner, said: “We are delighted to be opening in Cardiff’s magnificent St David’s Shopping Centre, our first diner in Wales and outside of the south east of England. “The city’s already burgeoning culinary scene and an ever increasing public demand for a quality fast-casual dining experience, means this an exciting task and a challenge we both relish and respect”.
