Bill’s Produce, the grocery and café concept run by the entrepreneurs behind Cote, has appointed Scott Macdonald, formerly of Mint Hotels, as its new group chef director. Macdonald spent over four years as group executive chef at Mint Hotels after previously holding the same titles at Selfridges from 2005 to 2007. Bill’s, which was founded by Bill Collison and is backed by Richard Caring, will open its latest site, and sixth overall, next Monday in London’s Islington. The group will open at the Pearl & Coutts office building in White Lion Street. It will become the second London site for the concept, which opened in Covent Garden last year. The group is also set to go on site at its first site in the South West later this month. The company will open a site in Exeter’s Ganby Street later this year after receiving planning permission for the unit. Bill’s, which currently has four other sites in Brighton, Cambridge, Lewes and Reading, is also thought to be looking a securing a unit in Bath.
