Michelin-starred chef Michel Roux Jnr has opened a new bar at his Westminster restaurant Roux at Parliament Square that includes a three-course cocktail menu. Billed as having a more informal atmosphere than the restaurant, Roux at the Pembury features a lighter selection of meals along with cocktails themed against starters, main courses and deserts. The bar has been re-designed to echo a members’ club concept, featuring soft leather seats and a solid hardwood bar top. Roux said: “This is a very exciting step in the evolution of the Roux at Parliament Square offer. With the launch of the bar we were keen to introduce a new drinks menu concept that reflects the influences of the main restaurant menu. Hence the three-course cocktail menu and use of seasonal ingredients which we look forward to introducing to our guests, whether they are visiting for dinner, drinks, or both.” Roux at the Pembury is named after the chef’s home town of Pembury in Kent.
