Mitchells & Butlers (M&B), the managed pub operator, is planning to open a pilot site for its new pan-Asian cuisine concept before the end of the year. Earlier this year, M&C Report revealed that company had hired Adrian McCormack, the former executive chef at Wagamama and Tampopo, to oversee the development of the offering. The company said it has identified an opportunity within pan-Asian cuisine, both within some of its current brand menus as well as a pilot concept site. It is thought the new concept will be piloted in one of the group’s existing sites. McCormack has been involved in helping to develop the menu content for the pilot site alongside M&B’s existing operational team. The development of the pan-Asian concept forms part of the company’s strategy to diversify its food sales. M&B pulled out of talks earlier this year to acquire the six-strong Tampopo chain. It is also thought to have taken a close look at buying Wagamama.
