Two experienced leisure sector operators have taken a bar/restaurant in London’s Farringdon for their first venue under a new business. Sian Austin and Georgia Muir have secured 26 Smithfield on the edge of Smithfield Market off an asking price of £185,000 for the 15 years remaining on the Punch Taverns lease, at a passing rent of £44,000 per annum exclusive. David Coffer Lyons acted for 26 Smithfield. The venue is due to be renamed Bird of Smithfield and re-launched in early 2013 after substantial investment and refurbishment of the three trading floors and terrace. Austin previously owned and run a chateau in the South West of France for several years and worked in operations for Tom Conran for the last three years. Muir has an operational background running venues such as the Tabernacle in Notting Hill and working within the ETM Group.
