Top cocktail barmen can now earn up to £50 an hour as "bar-tending" becomes a respectable profession in Britain. Cathie Smith, of the British Institute of Inn Keeping, says that bar work can teach the practical skills required to run a catering business. But she warns would-be recruits to steer clear of the trade if they are afraid of physically and mentally-demanding work.
