Award-winning pub operator and brewer C2 Investment is to invest around £750,000 on opening a new brewery and “pubby bistro” at Lancaster Leisure Park in Lancashire, writes Paul Charity. C2, which was founded by Matt Jackson and Phil Simpson in 2001, operates four freehold pubs and hotels — and a free-of-tie site. The company operates the 100-barrel capacity Lancaster Brewery, but hopes to have the new brewery open in mid-April, with contracts due to be signed this week. The new brewery, which will have a 350 barrels-per-week capacity, will have the “pubby bistro” on the same site. Diners will be able to watch the brewing process. Despite operating at maximum capacity, the existing brewery is not able to meet the demand for its beers, which has led to Thwaites brewing some of Lancaster’s ale under contract. It is hoped the new brewery will be a tourist attraction and help stimulate extra business at the bistro, which, according to Jackson, will be “more food-led and a lot sleeker than a normal pub”. Jackson won Best Individual in the MA150 club awards in 2009.
