Tootsies is to open its biggest site yet - on the River Thames in Richmond - as part of an rollout programme that will yield six new sites between now and Christmas. The 8,500sq ft restaurant plus other openings in Bury St Edmunds, Ipswich, Lincoln, Norwich and Oxford, will take the American diner concept to 30 restaurants. The £1m Richmond site, which sits between Henry’s and the Pitcher & Piano bar and was formerly office space, will operate across two floors, comprising 200 covers, two bars plus a terrace with an additional 60 covers. Tootsies was acquired by Urban Dining, the listed cash shell, last October for £30.5m.
