The UK arm of Sumo Salad, the Australian healthy eating concept, is to ramp up expansion as it aims to emulate the success of it antipodean forbearer. Entrepreneur Dominic Perks, who runs the company in the UK, is understood to be in negotiations with a number of possible franchisees, including regional city locations. He opens his second managed site at the One New Change retail and office development in autumn, following on from the successful launch of his original site near Tower Hill 18 months ago. A spokeswoman for Sumo said: “We are constantly looking for further opportunities and are in discussions on a number of sites with potential franchisees. “The plan is to emulate the Australian version of the business where it operates 90 franchises.” Sumo Salad was launched in Sydney in 2003 by Luke Bayliss and James Miller. The company, which has the tagline fresh food fast and serves wraps and sandwiches as well as salads, also has two outlets in Dubai.
