Signature Restaurants has leapt straight into The Sunday Times Profit Track 100 at No11. Profits grew 110% a year from £508,000 in 2001 to £4.7m in 2004. Contract caterer Baxter Storey, which runs restaurants for clients like ITV, Barclay's and Nokia, is placed at No62. Pub operator Barracuda, although not in the Top 100, is tipped as a company to watch. Chief executive Mark McQuater led a team of four directors to found Barracuda in 2000 and now has 180 managed pubs, with 50 more sites under development.
