The Olive Branch Company has acquired its third site in Edinburgh for an undisclosed sum. The company, founded by Stuart and Kerry Thorn, has purchased the former Herbe Bistro on George IV Bridge in the centre of the Scottish capital. The group plans to reopen the outlet at the end of May as a bistro serving Mediterranean cuisine. The couple, who founded the venture in 2003, currently have other restaurants in Broughton Street and Bruntsfield in Edinburgh. Herbe Bistro, which was nominated for the Best City Restaurant 2008 at the Scottish restaurant awards, was owned by Lara Kearney and John Rutter who had previously run the Marque restaurant chain. Christie & Co handled the deal.
