Girogio Locatelli has told how he decided to open his own restaurant after working in an Italian restaurant in London that was a "shithole". He says regional variations in Italy mean there is no such thing as Italian food. The regional particularity of the country's food, he insists, is everything. Locatelli also complains that Britain spends twice as much on feeding prisoners as on schoolchildren. And he reveals he looks after his staff, by insisting they all sit down together to eat a pasta lunch and then a three-course dinner. "I want," says Locatelli, "to see them get fat."
