Kelsall Inns, the fledgling Cheshire pub operator, is eyeing plans to rollout a Chicago-themed pizzeria concept under franchise after launching the offer at its Royal Oak pub in Kelsall. Colosimo’s pizzeria & prohibition bar opens on 20 September in a separate part of the building to the Royal Oak’s established Oak Restaurant, which will continue to operate. “Our more casual Courtyard room will be no ordinary pizza joint,” said general manager Scott Lucy. “Customers can stand by for some of the best and most original Neapolitan pizzas they have ever experienced – cooked in an authentic, specially imported Italian wood-fired pizza oven.” A company spokesman told M&C Report: “There’s very much an eye on franchise opportunities. There’s absolutely no reason, if it works, it can’t be rolled out.” Kelsall Inns was incorporated this year and is headed by Eric O’Connor. The Royal Oak is currently its only pub.
