Greenhouse, the Australian eco-restaurant concept founded by designer Joost Bakker, hopes to open its first site in the UK next year. The first site under the sustainable concept opened in Perth, Australia in 2009, while a pop-up version operated for six weeks in Sydney earlier this year. It is understood that Bakker is also looking to open permanent sites in Melbourne and Sydney, It is thought that property advisor Davis Coffer Lyons is aiding Bakker to find a suitable location in London for Greenhouse’s UK debut. The Greenhouse concept uses a productive building system developed by Bakker himself, which makes use of recycled and/or recyclable materials and minimizes ecological footprint. The concept also “encourages a new perspective on building and the function of buildings as a productive place that can harvest food, water and energy, and can improve the local environment for people and animals rather than exploiting it”.
