Richard Muir, owner of Café Fish in Edinburgh, has teamed up with ex-Paramount Restaurants chairman William Rollason, to acquire the Livebait site in Manchester. The pair have joined forces to launch SBG Restaurants, with plans to secure other central sites in major UK cities with Glasgow, Leeds and London already on their radar. Paramount Restaurants was placed into administration last week. The estate included four Livebait sites and it is thought that the new company might be interested in a couple of the remaining units in Covent Garden, Leeds and Waterloo. The Manchester site will undergo a complete undergo a complete refurbishment in spring 2012 before re-opening under the Livebait name. Rollason, who joined Paramount in August 2009 as a non-executive director, became chairman in May 2010 following the departures of Mark Phillips and Sir David Michel, respectively chief executive and chairman. He stepped down in July to be replaced by turnaround specialist Steve Smith.
