Restaurant chef Michael Vassos tells diners at his French bistro in north London to work out their own bill and pay what they think the meal was worth. He claims profits have soared since he introduced the novel "pay-what-you-like" scheme at Just Around the Corner. Vassos has a clever way of ensuring that customers do not underpay. When they give "a silly amount" he hands back their money and makes them "feel small". Three other restaurants – two in London and one in Edinburgh – have now copied his idea.
