Restaurant chain Carluccio’s fails to pay its waiters the minimum wage, relying on tips to make up the difference, according to the Independent on Sunday. The chain pays its 300 waiting staff just £3.75 per hour, 30% below the national minimum wage of £5.35, and then monitors tips received to ensure that the minimum wage is reached. If it is not, the restaurant makes up the difference. Carluccio’s financial director says that the remuneration scheme “encourages their best efforts”.
