Vital Ingredient, the tossed salad-to-go concept baked by American-Estonian real estate entrepreneur Paul Oberschneider, has secured two further sites in central London as it looks to grow its estate to 15 sites in the capital over the next 18 months. The group, which is led by Alex Heynes, opened its sixth site earlier this month in Fetter Lane and is currently on site at a further unit in Baker Street. The chain is believed to be in discussions on further sites before the end of the year. Earlier this year, the group appointed Stacy Meech from and Elisabeth the Chef as its first head of food.
