The Henley Centre says restaurants will have to appeal more to the single customer in the future as Britain undergoes a dramatic shift towards solitary living. The proportion of one-person households almost doubled between 1971 and 2001 to 31% of homes. Official forecasts say the proportion will rise to 40% by 2010.
